It’s almost Valentine’s Day! Here is a simple and pretty treat idea. Cookies and ice cream together… nothing better!
I found these beautiful red velvet waffle cookies and I thought they would be perfect for Valentine’s Day! They are really thin and crispy and the design is just too pretty! You could also use red velvet cookies or even red velvet brownies to make your ice cream sandwiches.
You can use any ice cream. I let mine sit on the counter for a few minutes so it would be easier to work with and wouldn’t break my cookies. To add the sprinkles, you can either shake them on or you can place your sandwiches back in the freezer to harden a bit and then roll them through the sprinkles. They definitely finish the look on these Valentine’s treats!
