If you’re looking for the perfect dessert for a warm weather get together, a lemon cake is definitely it! The bright, beautiful yellow brings the color of the season big time! The tart taste of lemon is the perfect fruit flavor to mark any spring or summer occasion.
I was in search of a yummy fruit flavored cake, but I wanted a recipe that was easy with simple ingredients and that’s just what I found! The recipe comes from Together as Family and it even has “easy” in the title so this was definitely the one! With just a few ingredients like a box of lemon cake mix and lemon instant pudding, the batter is ready in no time. Just slip the three pans in the oven and your layers are ready to go.
Then comes the lemon frosting, which is super fluffy and just the right amount of tartness. Again, simple ingredients including instant lemon pudding and a hand mixer and you’re ready to put your cake together. I doubled the frosting recipe to have plenty between the layers.
I sprinkled on some lemon zest and added lemon slices for decoration. It’s such a happy cake and tastes amazing!
